Exotic Italian Shrimp & Grits for Breakfast

Ingredients:

  • 12 pieces Large shrimp
  • 2 pieces Garlic cloves
  • 2 pieces Fresh chili peppers
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Extra virgin olive oil
  • 1 cup White wine
  • 1 piece Fresh tomato
  • 1 cup Polenta (Italian grits)
  • as needed grated Parmesan cheese
  • 2 tablespoons Butter
  • as needed Fresh basil leaves

Instructions:

  1. Start by rinsing the shrimp under cold water and set them aside to dry.
  2. Peel and chop the garlic. Cut the chili peppers into small rings.
  3. Warm the oil over medium heat in a large pan. Add the garlic and chili peppers.
  4. Add the shrimp to the pan and season with salt and pepper. Cook until the shrimp turn pink (about 3-5 minutes).
  5. Add the white wine and cook for another 2 minutes. Then add the chopped tomatoes.
  6. In the meantime, prepare the polenta. In a saucepan, bring 4 cups of salted water to a boil. Slowly stir in the polenta. Cook according to the package instructions.
  7. Once the polenta is ready, add the butter and grated parmesan. Stir until the butter has melted.
  8. Serve the shrimp over the polenta and garnish with fresh basil leaves.
