Exotic Italian Roasted Vegetable Medley

Ingredients:

  • 1 large eggplant
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 2 medium zucchini
  • 1 large red onion
  • 4 whole cloves of garlic
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon Italian seasoning
  • to taste salt
  • to taste black pepper

Instructions:

  1. Preheat oven to 450°F (225°C). Lightly oil a large roasting pan or baking sheet.
  2. Cut eggplant, bell peppers, zucchini, and onion into large chunks. Place the vegetables and garlic cloves onto the prepared pan.
  3. In a small bowl, combine the olive oil and balsamic vinegar. Drizzle over the vegetables. Sprinkle Italian seasoning, salt, and pepper over the top.
  4. Roast in the preheated oven until the vegetables are golden and slightly charred, about 35 minutes.
  5. Serve the roasted vegetable medley warm as a main dish or as a side dish. Enjoy this exotic Italian vegetarian delight!
