Ingredients:
- 1 large eggplant
- 1 large red bell pepper
- 1 large yellow bell pepper
- 2 medium zucchini
- 1 large red onion
- 4 whole cloves of garlic
- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon Italian seasoning
- to taste salt
- to taste black pepper
Instructions:
- Preheat oven to 450°F (225°C). Lightly oil a large roasting pan or baking sheet.
- Cut eggplant, bell peppers, zucchini, and onion into large chunks. Place the vegetables and garlic cloves onto the prepared pan.
- In a small bowl, combine the olive oil and balsamic vinegar. Drizzle over the vegetables. Sprinkle Italian seasoning, salt, and pepper over the top.
- Roast in the preheated oven until the vegetables are golden and slightly charred, about 35 minutes.
