
Exotic Italian Rice Balls (Arancini)

Ingredients:
- 2 cups Arborio Rice
- 4 cups Water
- 1 cup Parmesan Cheese
- 2 Eggs
- 1 cup Mozzarella Cheese
- to taste Prosciutto di Parma (optional)
- to taste Salt
- to taste Black Pepper
- 1 cup Flour
- 2 cups Breadcrumbs
- Oil for deep frying
Instructions:
- Bring water to a boil. Add rice, reduce heat to low, cover and cook until the rice has absorbed the water (about 15-20 minutes).
- Stir in the Parmesan cheese and allow the rice to fully cool.
- Once cool, beat in the eggs and season with salt and pepper.
- Flatten a small amount of the rice mixture in your hand and place a small chunk of Mozzarella and some Prosciutto (optional) in the center. Fold the rice around the filling to form a ball.
- Roll the balls in flour, then in beaten egg, and finally in breadcrumbs to coat.
- In a deep saucepan or fryer, heat the oil to 375F (190C). Deep-fry the balls, a few at a time, until they are golden brown and crispy (about 4 minutes).
- Drain on paper towels and serve hot.
