Exotic Italian Rice Balls (Arancini)

Ingredients:

  • 2 cups Arborio Rice
  • 4 cups Water
  • 1 cup Parmesan Cheese
  • 2 Eggs
  • 1 cup Mozzarella Cheese
  • to taste Prosciutto di Parma (optional)
  • to taste Salt
  • to taste Black Pepper
  • 1 cup Flour
  • 2 cups Breadcrumbs
  • Oil for deep frying

Instructions:

  1. Bring water to a boil. Add rice, reduce heat to low, cover and cook until the rice has absorbed the water (about 15-20 minutes).
  2. Stir in the Parmesan cheese and allow the rice to fully cool.
  3. Once cool, beat in the eggs and season with salt and pepper.
  4. Flatten a small amount of the rice mixture in your hand and place a small chunk of Mozzarella and some Prosciutto (optional) in the center. Fold the rice around the filling to form a ball.
  5. Roll the balls in flour, then in beaten egg, and finally in breadcrumbs to coat.
  6. In a deep saucepan or fryer, heat the oil to 375F (190C). Deep-fry the balls, a few at a time, until they are golden brown and crispy (about 4 minutes).
  7. Drain on paper towels and serve hot.
