Exotic Italian Pork Roulade

Ingredients:
- 1 piece Pork loin
- 200 grams Prosciutto
- 10 unit Fresh sage leaves
- 100 grams Parmigiano Reggiano cheese
- to taste Freshly ground black pepper
- to taste Sea salt
- 2 tablespoons Olive oil
- 1/2 cup Marsala wine
- a bunch Fresh parsley
- 2 unit Garlic cloves
- 1 teaspoon Fennel seeds
Instructions:
- Butterfly the pork loin and pound it until thin. Season with salt and pepper.
- Lay out the prosciutto slices on the pork, followed by the sage leaves and the cheese.
- Carefully roll up the pork and secure it with kitchen twine.
- In a skillet, heat the olive oil and sear all sides of the pork until brown.
- Add the Marsala wine to the skillet, and let it reduce for a couple of minutes.
- Transfer the pork to a roasting pan and cook in a pre-heated oven at 175°C for about 1 hour, basting occasionally.
- In the meantime, prepare a parsley and garlic rub by crushing the parsley, garlic, fennel seeds, salt and pepper in a mortar.
- Once cooked, remove the pork from the oven and let it rest for a few minutes before slicing.
- Serve the pork slices with the parsley and garlic rub.
