Exotic Italian Porchetta Sandwich

Ingredients:
- 1 piece Pork Belly
- 2 teaspoons Fennel Seeds
- 1 sprig Rosemary
- 4 cloves Garlic
- to taste Salt and Pepper
- 1 Italian Baguette
- 2 tablespoons Olive Oil
Instructions:
- Preheat oven to 325 degrees F (165 degrees C).
- Combine fennel seeds, rosemary, garlic, salt, and pepper in a bowl. Mix well to form the spice rub.
- Place pork belly on a clean surface, skin-side down. Apply the spice rub evenly over the meat.
- Roll up the pork belly tightly and secure with kitchen twine.
- Place the rolled pork on a rack in a roasting pan. Drizzle with olive oil and additional salt.
- Roast pork in the preheated oven for 2.5 hours. Increase oven temperature to 500 degrees F (260 degrees C) and roast for an additional 20-30 minutes until the skin is crispy.
- Let the porchetta rest for 15 minutes before slicing. Meanwhile, slice the baguette and warm in the oven.
