Exotic Italian Porchetta Sandwich

Ingredients:

  • 1 piece Pork Belly
  • 2 teaspoons Fennel Seeds
  • 1 sprig Rosemary
  • 4 cloves Garlic
  • to taste Salt and Pepper
  • 1 Italian Baguette
  • 2 tablespoons Olive Oil

Instructions:

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Combine fennel seeds, rosemary, garlic, salt, and pepper in a bowl. Mix well to form the spice rub.
  3. Place pork belly on a clean surface, skin-side down. Apply the spice rub evenly over the meat.
  4. Roll up the pork belly tightly and secure with kitchen twine.
  5. Place the rolled pork on a rack in a roasting pan. Drizzle with olive oil and additional salt.
  6. Roast pork in the preheated oven for 2.5 hours. Increase oven temperature to 500 degrees F (260 degrees C) and roast for an additional 20-30 minutes until the skin is crispy.
  7. Let the porchetta rest for 15 minutes before slicing. Meanwhile, slice the baguette and warm in the oven.
  8. Serve thin slices of porchetta in warm baguette. Enjoy your exotic Italian Porchetta sandwich!
