Exotic Italian Pasta with Truffle and Pecorino Cheese

Ingredients:

  • 400 grams Spaghetti
  • 1 whole Black Truffle
  • 100 grams Pecorino cheese
  • 2 cloves Garlic
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Boil the spaghetti in a pot of salted water until it is al dente (firm to the bite).
  2. While the pasta is cooking, heat the olive oil in a large frying pan over medium heat. Add the finely chopped garlic to the pan and sauté until it is golden brown.
  3. Grate half of the truffle and the Pecorino cheese into the frying pan. Stir well to combine the ingredients into a creamy sauce. Season with salt and pepper.
  4. Once the spaghetti is cooked, drain it and save a cup of the pasta water. Add the spaghetti to the frying pan and toss it well to coat in the truffle and cheese sauce. Add a bit of pasta water if necessary to create a smoother sauce.
  5. Divide the pasta among four plates. Use a truffle slicer or a vegetable peeler to shave the remaining truffle over each plate. Serve immediately and enjoy your exotic Italian lunch!
