
Exotic Italian Midnight Fish Stew

Ingredients:
- 2 tablespoons Olive oil
- 3 pieces Garlic cloves
- 1 piece Red chilli
- 300 grams White fish
- 200 grams Cherry tomatoes
- 50 grams Pitted black olives
- 1 tablespoon Capers
- 500 mL Fish stock
- 1 bunch Fresh parsley
- to taste Salt
- to taste Pepper
Instructions:
- Heat the olive oil in a large, shallow pan. Add garlic cloves and red chilli, finely chopped. Cook for about 2 minutes until the garlic is golden.
- Cut the fish into chunks and add to the pan. Cook for about 2-3 minutes until the fish starts to turn opaque.
- Add the cherry tomatoes, black olives, capers, and fish stock to the pan. Bring to a simmer and cook for 10-15 minutes until the fish is cooked through and the tomatoes have broken down into a sauce.
- Chop the fresh parsley and mix through the stew. Add salt and pepper to taste.
- Serve the stew over some freshly cooked pasta or with crusty bread.
