Exotic Italian Midnight Fish Stew

Ingredients:

  • 2 tablespoons Olive oil
  • 3 pieces Garlic cloves
  • 1 piece Red chilli
  • 300 grams White fish
  • 200 grams Cherry tomatoes
  • 50 grams Pitted black olives
  • 1 tablespoon Capers
  • 500 mL Fish stock
  • 1 bunch Fresh parsley
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Heat the olive oil in a large, shallow pan. Add garlic cloves and red chilli, finely chopped. Cook for about 2 minutes until the garlic is golden.
  2. Cut the fish into chunks and add to the pan. Cook for about 2-3 minutes until the fish starts to turn opaque.
  3. Add the cherry tomatoes, black olives, capers, and fish stock to the pan. Bring to a simmer and cook for 10-15 minutes until the fish is cooked through and the tomatoes have broken down into a sauce.
  4. Chop the fresh parsley and mix through the stew. Add salt and pepper to taste.
  5. Serve the stew over some freshly cooked pasta or with crusty bread.
