
Exotic Italian Herb Crusted Fish (Pesce Erietta)

Ingredients:
- 4 pieces Fish fillets (like Halibut, Cod, or Haddock)
- 2 tablespoons Fresh rosemary
- 2 tablespoons Fresh thyme
- 2 cloves Garlic Cloves
- 1 whole Lemon
- to taste Extra Virgin Olive Oil
- 1 cup Italian Bread Crumbs
- to taste Salt
- to taste Pepper
Instructions:
- 1. Preheat the oven to 200°C or 400°F. Line a baking sheet with foil for easy clean up.
- 2. Rinse and pat dry the fish fillets.
- 3. In a small bowl, combine the chopped fresh thyme, rosemary, minced garlic, salt, and pepper.
- 4. Lay the fillets on the foil lined baking sheet. Squeeze the lemon over the fillets making sure each fillet gets some lemon juice. Then drizzle some olive oil over the fish fillets.
- 5. Sprinkle the herb mixture over the fillets. Then, press the bread crumbs onto the fillets covering the tops entirely.
- 6. Drizzle a bit more olive oil over the bread crumbs and bake in the oven for about 15-20 minutes or until the fish is cooked through and the bread crumbs are golden brown.
- 7. Let the fish rest for a few minutes before serving. Serve with a lemon wedge and enjoy this exotic Italian lunch!
