Exotic Italian Fish Frittata

Ingredients:

  • 2 tablespoons Olive oil
  • 1 whole Small red onion, finely chopped
  • 1 teaspoon Fresh Thyme
  • 2 whole Fresh tomatoes, chopped
  • 200 grams Smoked salmon, sliced
  • 6 whole Large eggs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper, freshly ground
  • 200 grams Feta cheese, crumbled

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat olive oil in a large, oven-safe skillet over medium heat. Add the chopped red onion, and sauté until soft and translucent, around 5 minutes.
  3. Add the fresh thyme and tomatoes to the skillet. Cook until slightly softened, about 1 to 2 minutes.
  4. Add the sliced smoked salmon to the skillet, distributing evenly across the pan.
  5. In a medium bowl, beat together the eggs, salt, and freshly ground black pepper. Pour this mixture over the salmon and vegetables in the skillet.
  6. Sprinkle the crumbled feta cheese on top of the egg and salmon mixture.
  7. Bake in the preheated oven until the eggs are set and the feta is lightly browned, approximately 20 to 25 minutes.
  8. Remove from the oven and allow to cool for a few minutes before serving. Slice into wedges, similar to a pie, and enjoy!
