
Exotic Italian Fish Frittata

Ingredients:
- 2 tablespoons Olive oil
- 1 whole Small red onion, finely chopped
- 1 teaspoon Fresh Thyme
- 2 whole Fresh tomatoes, chopped
- 200 grams Smoked salmon, sliced
- 6 whole Large eggs
- 1 teaspoon Salt
- 1 teaspoon Black pepper, freshly ground
- 200 grams Feta cheese, crumbled
Instructions:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat olive oil in a large, oven-safe skillet over medium heat. Add the chopped red onion, and sauté until soft and translucent, around 5 minutes.
- Add the fresh thyme and tomatoes to the skillet. Cook until slightly softened, about 1 to 2 minutes.
- Add the sliced smoked salmon to the skillet, distributing evenly across the pan.
- In a medium bowl, beat together the eggs, salt, and freshly ground black pepper. Pour this mixture over the salmon and vegetables in the skillet.
- Sprinkle the crumbled feta cheese on top of the egg and salmon mixture.
- Bake in the preheated oven until the eggs are set and the feta is lightly browned, approximately 20 to 25 minutes.
- Remove from the oven and allow to cool for a few minutes before serving. Slice into wedges, similar to a pie, and enjoy!
