
Exotic Italian Fish Crostini

Ingredients:
- 4 pieces Fresh white fish fillets
- 2 teaspoons lemon zest
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2 cloves Garlic
- 2 tablespoons Olive oil
- 1 loaf Italian bread
- 1/2 cup Parmesan cheese
- 1/4 cup Chopped flat-leaf parsley
Instructions:
- Preheat the oven to 350 degrees F (175 degrees C).
- Slice the Italian bread into thick rounds and place onto a baking tray.
- In a small bowl, mix the olive oil and crushed garlic. Brush this mixture onto one side of each bread slice.
- Bake the bread for 10 minutes, or until crispy and golden.
- In the meantime, season the fish fillets with salt, pepper, and lemon zest.
- Heat a pan over medium heat with a tablespoon of olive oil. Once hot, sear the fish fillets on each side for about 3-4 minutes or until cooked through.
- Once cooked, break the fish into smaller, bite-sized pieces.
- Top each bread slice with the cooked fish, a sprinkling of parmesan cheese, and some chopped parsley.
- Return the tray to the oven and bake for another 2 minutes, or until the cheese is melted.
- Serve your exotic Italian Fish Crostini while hot as a snack or appetizer with a slice of lemon on the side.
