Exotic Italian Fish Crostini

Ingredients:

  • 4 pieces Fresh white fish fillets
  • 2 teaspoons lemon zest
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 loaf Italian bread
  • 1/2 cup Parmesan cheese
  • 1/4 cup Chopped flat-leaf parsley

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Slice the Italian bread into thick rounds and place onto a baking tray.
  3. In a small bowl, mix the olive oil and crushed garlic. Brush this mixture onto one side of each bread slice.
  4. Bake the bread for 10 minutes, or until crispy and golden.
  5. In the meantime, season the fish fillets with salt, pepper, and lemon zest.
  6. Heat a pan over medium heat with a tablespoon of olive oil. Once hot, sear the fish fillets on each side for about 3-4 minutes or until cooked through.
  7. Once cooked, break the fish into smaller, bite-sized pieces.
  8. Top each bread slice with the cooked fish, a sprinkling of parmesan cheese, and some chopped parsley.
  9. Return the tray to the oven and bake for another 2 minutes, or until the cheese is melted.
  10. Serve your exotic Italian Fish Crostini while hot as a snack or appetizer with a slice of lemon on the side.
