Exotic Italian Egg Pesto Pasta

Ingredients:

  • 8 piece Eggs
  • 500 grams Spaghetti Pasta
  • 2 cups Fresh Basil Leaves
  • 5 piece Garlic Cloves
  • 0.5 cup Olive Oil
  • 1 cup Parmesan Cheese
  • 0.5 cup Pine Nuts
  • to taste Salt and Pepper

Instructions:

  1. In a blender or food processor, combine fresh basil leaves, garlic, pine nuts, and pulse until coarsely chopped.
  2. Add 0.5 cup of olive oil and process until fully incorporated and smooth. Mix in the Parmesan cheese.
  3. Boil the pasta in salted water until al dente. Reserve 1 cup of pasta water before draining the pasta.
  4. While pasta is cooking, beat 8 eggs lightly in a separate bowl. Season with salt and pepper.
  5. In a large pan, slowly cook the beaten eggs until just set, then add the cooked pasta, and stir gently to combine.
  6. Mix in the pesto with pasta and eggs, adding reserved pasta water a bit at a time until sauce reaches desired consistency.
  7. Serve the pasta with additional Parmesan cheese on top, if desired.
