
Exotic Italian Egg Pesto Pasta

Ingredients:
- 8 piece Eggs
- 500 grams Spaghetti Pasta
- 2 cups Fresh Basil Leaves
- 5 piece Garlic Cloves
- 0.5 cup Olive Oil
- 1 cup Parmesan Cheese
- 0.5 cup Pine Nuts
- to taste Salt and Pepper
Instructions:
- In a blender or food processor, combine fresh basil leaves, garlic, pine nuts, and pulse until coarsely chopped.
- Add 0.5 cup of olive oil and process until fully incorporated and smooth. Mix in the Parmesan cheese.
- Boil the pasta in salted water until al dente. Reserve 1 cup of pasta water before draining the pasta.
- While pasta is cooking, beat 8 eggs lightly in a separate bowl. Season with salt and pepper.
- In a large pan, slowly cook the beaten eggs until just set, then add the cooked pasta, and stir gently to combine.
- Mix in the pesto with pasta and eggs, adding reserved pasta water a bit at a time until sauce reaches desired consistency.
- Serve the pasta with additional Parmesan cheese on top, if desired.
