
Exotic Italian Chicken Breakfast Frittata

Ingredients:
- 2 pieces boneless chicken breast
- 6 eggs
- 2 tablespoons olive oil
- 1 medium onion
- 2 cloves garlic
- 1 red bell pepper
- 2 cups spinach
- 1/2 cup mascarpone cheese
- 1/4 cup sun-dried tomatoes
- to taste salt and pepper
Instructions:
- 1. Preheat your oven to 375 degrees F (190 degrees C).
- 2. Dice the chicken into bite-size pieces, season with salt and pepper.
- 3. Heat a tablespoon of olive oil in a large, non-stick, oven-proof skillet over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from pan and set aside.
- 4. In the same skillet, add another tablespoon of oil. Add the chopped onion and diced bell pepper, cook until the onion is translucent, about 5 minutes.
- 5. Add the minced garlic and cook for an additional minute, until fragrant.
- 6. Add the spinach to the skillet, cook until wilted.
- 7. In a large bowl, whisk together the eggs and mascarpone until smooth.
- 8. Spread the cooked vegetables evenly in the skillet, then sprinkle the browned chicken pieces over top.
- 9. Pour the egg mixture over the top, making sure it covers all the ingredients in the skillet. Sprinkle over the sun-dried tomatoes.
- 10. Move the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and lightly golden on top.
