Exotic Italian Chicken Breakfast Frittata

Ingredients:

  • 2 pieces boneless chicken breast
  • 6 eggs
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 2 cups spinach
  • 1/2 cup mascarpone cheese
  • 1/4 cup sun-dried tomatoes
  • to taste salt and pepper

Instructions:

  1. 1. Preheat your oven to 375 degrees F (190 degrees C).
  2. 2. Dice the chicken into bite-size pieces, season with salt and pepper.
  3. 3. Heat a tablespoon of olive oil in a large, non-stick, oven-proof skillet over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from pan and set aside.
  4. 4. In the same skillet, add another tablespoon of oil. Add the chopped onion and diced bell pepper, cook until the onion is translucent, about 5 minutes.
  5. 5. Add the minced garlic and cook for an additional minute, until fragrant.
  6. 6. Add the spinach to the skillet, cook until wilted.
  7. 7. In a large bowl, whisk together the eggs and mascarpone until smooth.
  8. 8. Spread the cooked vegetables evenly in the skillet, then sprinkle the browned chicken pieces over top.
  9. 9. Pour the egg mixture over the top, making sure it covers all the ingredients in the skillet. Sprinkle over the sun-dried tomatoes.
  10. 10. Move the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and lightly golden on top.
