Exotic Italian Breakfast Pizza

Ingredients:

  • 1 lb Pizza dough
  • 2 tbsp Olive oil
  • 1 cup Mozzarella cheese
  • 0.5 cup Parmesan cheese
  • 100 g Prosciutto
  • 3 tbsp Fig jam
  • 2 cup Fresh arugula
  • 4 pcs Fresh eggs
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat the oven to 450 degrees F (230 degrees C). If you have a pizza stone, put it in the oven to heat.
  2. On a floured surface, roll out your pizza dough to form a large round, about 0.2 inches thick. Transfer the pizza dough to a piece of parchment paper.
  3. Spread the fig jam evenly across the dough, then add mozzarella and Parmesan cheese.
  4. Lay the prosciutto slices over the cheese.
  5. Slide the pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for 10 minutes, until the crust is starting to turn golden and the cheese is bubbling.
  6. Remove the pizza from the oven and carefully crack an egg onto each quarter. Return the pizza to the oven and bake for another 5 minutes, until the egg whites are set but yolks are still runny. If you like your eggs more cooked, leave them in the oven a little longer.
  7. Remove the pizza from the oven and finish with a sprinkle of salt and pepper and a handful of arugula. Slice and serve immediately.
