Exotic Italian Breakfast Frittata

Ingredients:

  • 8 Eggs
  • 2 tablespoons Olive oil
  • 1 cup Cherry tomatoes
  • 1 cup Fresh mozzarella
  • 1 bunch Fresh basil leaves
  • 2 links Italian sausage
  • 1 small Black truffle
  • to taste Salt and pepper

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Heat the olive oil in a large, oven-safe skillet over medium heat. Add the Italian sausage links, cook until browned.
  3. Crack the eggs into a large bowl, whisk them together with a pinch of salt and pepper.
  4. Once the sausages are cooked, slice them thinly and distribute them evenly across the skillet.
  5. Distribute the cherry tomatoes and mozzarella chunks evenly across the skillet as well.
  6. Pour the whisked eggs over the sausage, tomatoes, and mozzarella in the skillet.
  7. Gently place the fresh basil leaves on top of the egg mixture. Grate the black truffle over the skillet, using as much or as little as you prefer.
  8. Place the skillet in the preheated oven and bake for about 20 minutes, or until the eggs are set and the edges are golden brown.
  9. Remove the skillet from the oven, let the frittata cool for a few minutes before cutting into slices. Serve immediately.
