
Exotic Italian Breakfast Frittata

Ingredients:
- 8 Eggs
- 2 tablespoons Olive oil
- 1 cup Cherry tomatoes
- 1 cup Fresh mozzarella
- 1 bunch Fresh basil leaves
- 2 links Italian sausage
- 1 small Black truffle
- to taste Salt and pepper
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- Heat the olive oil in a large, oven-safe skillet over medium heat. Add the Italian sausage links, cook until browned.
- Crack the eggs into a large bowl, whisk them together with a pinch of salt and pepper.
- Once the sausages are cooked, slice them thinly and distribute them evenly across the skillet.
- Distribute the cherry tomatoes and mozzarella chunks evenly across the skillet as well.
- Pour the whisked eggs over the sausage, tomatoes, and mozzarella in the skillet.
- Gently place the fresh basil leaves on top of the egg mixture. Grate the black truffle over the skillet, using as much or as little as you prefer.
- Place the skillet in the preheated oven and bake for about 20 minutes, or until the eggs are set and the edges are golden brown.
- Remove the skillet from the oven, let the frittata cool for a few minutes before cutting into slices. Serve immediately.
