Exotic Italian Beef Sliders

Ingredients:

  • 2 lbs Beef chuck roast
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 Tbsp Olive oil
  • 2 medium-sized Yellow onions
  • 4 Garlic cloves
  • 2 cups Red wine
  • 3 cups Beef broth
  • 2 Rosemary sprigs
  • 2 Thyme sprigs
  • 12 Italian slider buns
  • 1 lb Fresh mozzarella cheese
  • 1/2 cup Sun-dried tomatoes
  • 1/2 cup Basil Pesto

Instructions:

  1. Season the beef chuck roast with salt and pepper.
  2. In a large pot, heat up the olive oil over medium heat and brown the beef on all sides. Remove the beef and set aside.
  3. In the same pot, add the chopped onions and minced garlic. Saute until the onions become translucent.
  4. Add the red wine and deglaze the pot by scraping up the browned bits from the bottom.
  5. Return the beef to the pot. Add beef broth, rosemary, and thyme.
  6. Bring the pot to a simmer, cover and cook for about 2 hours until the beef is tender and can easily be pulled apart.
  7. Once the beef is cooked, shred it and keep it warm in the sauce.
  8. To assemble the sliders, halve the buns and layer the bottom halves with shredded beef, a slice of mozzarella, sun-dried tomatoes, and a dollop of basil pesto. Place the top half of the buns.
  9. Heat the assembled sliders in the oven at 350°F for 10 minutes, until the cheese is melted and the buns are slightly toasted.
  10. Serve warm and enjoy!
