Exotic Italian Beef Sliders

Ingredients:
- 2 lbs Beef chuck roast
- 1 tsp Salt
- 1/2 tsp Pepper
- 2 Tbsp Olive oil
- 2 medium-sized Yellow onions
- 4 Garlic cloves
- 2 cups Red wine
- 3 cups Beef broth
- 2 Rosemary sprigs
- 2 Thyme sprigs
- 12 Italian slider buns
- 1 lb Fresh mozzarella cheese
- 1/2 cup Sun-dried tomatoes
- 1/2 cup Basil Pesto
Instructions:
- Season the beef chuck roast with salt and pepper.
- In a large pot, heat up the olive oil over medium heat and brown the beef on all sides. Remove the beef and set aside.
- In the same pot, add the chopped onions and minced garlic. Saute until the onions become translucent.
- Add the red wine and deglaze the pot by scraping up the browned bits from the bottom.
- Return the beef to the pot. Add beef broth, rosemary, and thyme.
- Bring the pot to a simmer, cover and cook for about 2 hours until the beef is tender and can easily be pulled apart.
- Once the beef is cooked, shred it and keep it warm in the sauce.
- To assemble the sliders, halve the buns and layer the bottom halves with shredded beef, a slice of mozzarella, sun-dried tomatoes, and a dollop of basil pesto. Place the top half of the buns.
- Heat the assembled sliders in the oven at 350°F for 10 minutes, until the cheese is melted and the buns are slightly toasted.
- Serve warm and enjoy!
