
Exotic Indian Style Pork Curry

Ingredients:
- 1 kg Boneless pork
- 1 large Onion
- 3 Garlic cloves
- 1.5 inches Fresh ginger
- 1 tsp Coriander powder
- 1 tsp Turmeric powder
- 1 tsp Cumin seeds
- 1 tsp Black mustards seeds
- 0.5 tsp Red chili powder
- 1 Cinnamon stick
- 1 large Tomato
- 400 ml Coconut milk
- 1 handful Fresh coriander
- to taste Salt
- 2 tbsp Cooking oil
Instructions:
- 1. Heat cooking oil in a large pan, add cumin seeds, black mustard seeds, and cinnamon stick. Fry for 1-2 minutes until fragrant.
- 2. Add finely chopped onion and sauté until it turns golden brown.
- 3. Add minced garlic and grated ginger to the pan, fry for another 1-2 minutes.
- 4. Add in the coriander powder, turmeric powder, and red chili powder. Mix well.
- 5. Now add the pork to the pan and cook until it turns brown from all sides.
- 6. Add chopped tomato, stir and cook until it becomes soft and pulpy.
- 7. Pour the coconut milk into the pan, add salt and mix well. Reduce the heat and let the curry simmer for about 40-45 minutes.
- 8. Check the consistency of the curry, adjust the seasoning.
- 9. Garnish with fresh coriander leaves and serve hot with rice or Indian bread.
