
Exotic Indian Spiced Scrambled Eggs (Anda Bhurji)

Ingredients:
- 8 Eggs
- 1 large Onion
- 2 medium Tomatoes
- 2 Green chillies
- 1 teaspoon Red chili powder
- 0.5 teaspoon Turmeric
- 1 teaspoon Cumin seeds
- a handful Coriander leaves
- 2 tablespoons Butter
- to taste Salt
Instructions:
- Chop the onion, tomatoes, and green chillies finely.
- In a pan, melt the butter and add the cumin seeds. Let them sizzle for about 10 seconds.
- Add the chopped onions and green chillies to the pan and sauté them until the onions turn translucent.
- Now add the chopped tomatoes, red chili powder, turmeric and salt. Cook until the tomatoes are soft.
- Whisk the eggs in a bowl and add them to the pan. Cook them on low heat, continuously stirring to mix with the vegetables and spices.
- Cook until the eggs are scrambled and fully cooked. Garnish with chopped coriander leaves and serve hot with Indian bread (roti) or toast.
