Exotic Indian Spiced Scrambled Eggs (Anda Bhurji)

Ingredients:

  • 8 Eggs
  • 1 large Onion
  • 2 medium Tomatoes
  • 2 Green chillies
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric
  • 1 teaspoon Cumin seeds
  • a handful Coriander leaves
  • 2 tablespoons Butter
  • to taste Salt

Instructions:

  1. Chop the onion, tomatoes, and green chillies finely.
  2. In a pan, melt the butter and add the cumin seeds. Let them sizzle for about 10 seconds.
  3. Add the chopped onions and green chillies to the pan and sauté them until the onions turn translucent.
  4. Now add the chopped tomatoes, red chili powder, turmeric and salt. Cook until the tomatoes are soft.
  5. Whisk the eggs in a bowl and add them to the pan. Cook them on low heat, continuously stirring to mix with the vegetables and spices.
  6. Cook until the eggs are scrambled and fully cooked. Garnish with chopped coriander leaves and serve hot with Indian bread (roti) or toast.
