Exotic Indian Spiced Beef Curry

Ingredients:
- 2 lbs Boneless beef chuck roast
- 2 tablespoons Vegetable oil
- 2 cups Onions, chopped
- 6 Garlic cloves, minced
- 1 tablespoon Fresh ginger, grated
- 1 tablespoon Garam masala
- 2 teaspoons Ground coriander
- 2 teaspoons Ground cumin
- 1 teaspoon Ground turmeric
- 1/2 teaspoon Ground cayenne pepper
- 4 cups Beef broth
- 1 Can of diced tomatoes
- 1/2 cup Fresh cilantro, chopped
- to taste Salt and Pepper
- Basmati rice, for serving
Instructions:
- Heat the vegetable oil in a large pot over medium-high heat. Season the beef with salt and pepper and add it to the pot. Cook until browned on all sides, about 8 minutes. Transfer the beef to a plate.
- In the same pot, add the onions, garlic, and ginger. Cook until the onions are softened, about 5 minutes.
- Stir in the garam masala, coriander, cumin, turmeric, and cayenne. Cook for 2 minutes.
- Return the beef to the pot and add the broth and tomatoes. Bring the mixture to a boil. Reduce the heat to low, cover, and simmer until the beef is tender, about 2 hours.
- Stir in the cilantro and season with more salt and pepper if needed.
- Serve the curry over basmati rice.
