Exotic Indian Spiced Beef Curry

Ingredients:

  • 2 lbs Boneless beef chuck roast
  • 2 tablespoons Vegetable oil
  • 2 cups Onions, chopped
  • 6 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 tablespoon Garam masala
  • 2 teaspoons Ground coriander
  • 2 teaspoons Ground cumin
  • 1 teaspoon Ground turmeric
  • 1/2 teaspoon Ground cayenne pepper
  • 4 cups Beef broth
  • 1 Can of diced tomatoes
  • 1/2 cup Fresh cilantro, chopped
  • to taste Salt and Pepper
  • Basmati rice, for serving

Instructions:

  1. Heat the vegetable oil in a large pot over medium-high heat. Season the beef with salt and pepper and add it to the pot. Cook until browned on all sides, about 8 minutes. Transfer the beef to a plate.
  2. In the same pot, add the onions, garlic, and ginger. Cook until the onions are softened, about 5 minutes.
  3. Stir in the garam masala, coriander, cumin, turmeric, and cayenne. Cook for 2 minutes.
  4. Return the beef to the pot and add the broth and tomatoes. Bring the mixture to a boil. Reduce the heat to low, cover, and simmer until the beef is tender, about 2 hours.
  5. Stir in the cilantro and season with more salt and pepper if needed.
  6. Serve the curry over basmati rice.
