Exotic Indian Rice Balls

Ingredients:

  • 1 cup Basmati rice
  • 2 cups Water
  • 1 tbsp Indian spices (turmeric, cumin, garam masala etc.)
  • 2 tbsp Butter
  • 1 bunch Fresh cilantro
  • 1 bunch Fresh mint leaves
  • 1 cup Flour
  • 2 whole Eggs
  • enough to deep fry Vegetable oil

Instructions:

  1. Wash the basmati rice under cold water until the water runs clear. Then, cook rice with 2 cups of water in a rice cooker or on the stovetop per package instructions, let it cool, and set aside.
  2. In a pan melt the butter and add the Indian spices. Let it simmer for a few minutes to release the flavors.
  3. Chop the fresh cilantro and mint leaves and add them to the pan, stir well into the spiced butter.
  4. Combine the spiced butter mixture with the cooked and cooled rice, ensuring every grain is coated.
  5. Form the rice into small, round balls and set aside.
  6. Beat the eggs in a bowl and put flour into a separate bowl.
  7. Dip the formed rice balls into the flour, then in egg, and set on a clean plate.
  8. In a deep pan or pot, heat the vegetable oil for deep frying.
  9. Once the oil is hot enough, fry the rice balls in batches until golden brown on all sides.
  10. Remove from oil, let them drain on kitchen paper and serve hot with your favorite dipping sauce.
