
Exotic Indian Mixed Vegetable Curry

Ingredients:
- 2.5 cups Mixed Vegetables (Carrot, beans, peas, bell peppers, potatoes)
- 1 large Onion
- 2 Green Chillies
- 5 pieces Garlic Cloves
- 1 inch piece Ginger
- 1.5 cups Tomato Puree
- 1 tsp Cumin Seeds
- 0.5 tsp Turmeric Powder
- 2 tsp Coriander Powder
- 1 tsp Garam Masala
- 0.5 cup Fresh Cream
- 1 tsp Dried Fenugreek Leaves (Optional)
- to taste Salt
- 2 tbsp Vegetable Oil
- for garnish Fresh Cilantro Leaves
Instructions:
- Finely chop the onions, grind the green chillies, ginger and garlic into a paste. Cut the mixed veggies into even pieces.
- Heat oil in a large pan on medium heat. Add cumin seeds, let them crackle. Now add the chopped onions, sauté until they become translucent.
- Now add the green chilli, ginger, garlic paste and sauté a while till the raw smell fades.
- Add the tomato puree next, cook until oil separates. Now add turmeric, coriander powder and garam masala. Mix everything together.
- Add the mixed veggies, salt and little water. Cover and cook until veggies become soft.
- Now add the fresh cream, dried fenugreek leaves (optional), mix everything and cook for another 2 minutes.
- Garnish with fresh cilantro leaves, the curry is ready to be served hot with naan bread or basmati rice.
