Exotic Indian Midnight Beef Curry

Ingredients:
- 500 gram Beef chunks
- 1 large Onion
- 2 Garlic cloves
- 1 piece inch Fresh ginger
- 1 large Tomato
- 1 sprig Curry leaves
- 1/2 teaspoon Turmeric Powder
- 1/2 teaspoon Cayenne Pepper
- 1 teaspoon Cumin Powder
- 1 teaspoon Garam Masala
- 200 ml Coconut milk
- 1 Lime, for garnish
- handful Coriander leaves, for garnish
Instructions:
- 1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and ginger. Sauté until onions are translucent and the aroma of the garlic and ginger fills the room.
- 2. Add the tomato, curry leaves, and spices. Cook until the tomato has softened and the spices have integrated well with the mixture.
- 3. Add the beef to the pot. Stir well to ensure each piece is coated with the spice mixture. Sear the beef on all sides.
- 4. Once beef is browned, pour in the coconut milk. Lower the heat, cover the pot, and let it simmer for about 45-60 minutes, or until the beef is tender.
- 5. Serve hot with a squeeze of lime and sprinkled coriander leaves on top. Ideal accompaniment would be basmati rice or warm naan bread.
