
Exotic Indian Fruit Curry

Ingredients:
- 1 whole Ripe mango
- 2 whole Banana
- 1 whole Apple
- 1/4 whole Pineapple
- 1 can Coconut milk
- 1 tbsp Curry powder
- 1 tsp Cumin seeds
- 1 tsp Coriander seeds
- 2 tbsp Olive oil
- to taste Salt
- for garnish Fresh cilantro leaves
Instructions:
- Peel and chop all the fruits into small pieces.
- Heat the oil in a pan over medium heat. Add the cumin and coriander seeds and cook until they start to pop.
- Add the chopped fruits into the pan and stir well to ensure they are fully coated with the spice mixture.
- Add the curry powder and stir well, cooking for another 2-3 minutes.
- Pour in the coconut milk, reduce the heat, and allow the mixture to simmer for about 15 minutes.
- Season with salt according to your preference and remove the pan from the heat.
- Serve hot, garnished with fresh cilantro leaves.
