Exotic Indian Fruit Curry

Ingredients:

  • 1 whole Ripe mango
  • 2 whole Banana
  • 1 whole Apple
  • 1/4 whole Pineapple
  • 1 can Coconut milk
  • 1 tbsp Curry powder
  • 1 tsp Cumin seeds
  • 1 tsp Coriander seeds
  • 2 tbsp Olive oil
  • to taste Salt
  • for garnish Fresh cilantro leaves

Instructions:

  1. Peel and chop all the fruits into small pieces.
  2. Heat the oil in a pan over medium heat. Add the cumin and coriander seeds and cook until they start to pop.
  3. Add the chopped fruits into the pan and stir well to ensure they are fully coated with the spice mixture.
  4. Add the curry powder and stir well, cooking for another 2-3 minutes.
  5. Pour in the coconut milk, reduce the heat, and allow the mixture to simmer for about 15 minutes.
  6. Season with salt according to your preference and remove the pan from the heat.
  7. Serve hot, garnished with fresh cilantro leaves.
