Exotic Indian Fish Curry

Ingredients:

  • 4 medium Fish fillets
  • 2 medium Onions
  • 2 medium Tomatoes
  • 4 cloves Garlic cloves
  • 2 inch piece Ginger
  • 10 leaves Curry leaves
  • 1 tsp Turmeric powder
  • 2 tsp Red chilli powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin seeds
  • 1 cup Coconut milk
  • 1/2 tsp Mustard seeds
  • to taste Salt
  • 3 tbsp Cooking oil

Instructions:

  1. Clean the fish fillets and apply a little salt and turmeric powder. Set it aside for 15 minutes.
  2. Heat oil in a pan and add mustard seeds. Let them pop before adding cumin seeds and curry leaves.
  3. Add finely chopped onions and sauté until they turn translucent.
  4. Add finely chopped ginger and garlic, and stir fry for a minute.
  5. Add finely chopped tomatoes, turmeric powder, red chilli powder, and coriander powder. Mix well and sauté until tomatoes are well cooked.
  6. Add the fish fillets into the pan. Coat the fish well with the masala and let it cook for about 5 minutes on each side.
  7. Pour the coconut milk into the pan. Let it begin to bubble before reducing the heat. Cover the pan and let it cook for about 15 minutes.
  8. Check the fish to ensure it is cooked. Add salt, if needed.
  9. Garnish with fresh coriander leaves and serve hot with rice.
