
Exotic Indian Fish Curry

Ingredients:
- 4 medium Fish fillets
- 2 medium Onions
- 2 medium Tomatoes
- 4 cloves Garlic cloves
- 2 inch piece Ginger
- 10 leaves Curry leaves
- 1 tsp Turmeric powder
- 2 tsp Red chilli powder
- 1 tsp Coriander powder
- 1 tsp Cumin seeds
- 1 cup Coconut milk
- 1/2 tsp Mustard seeds
- to taste Salt
- 3 tbsp Cooking oil
Instructions:
- Clean the fish fillets and apply a little salt and turmeric powder. Set it aside for 15 minutes.
- Heat oil in a pan and add mustard seeds. Let them pop before adding cumin seeds and curry leaves.
- Add finely chopped onions and sauté until they turn translucent.
- Add finely chopped ginger and garlic, and stir fry for a minute.
- Add finely chopped tomatoes, turmeric powder, red chilli powder, and coriander powder. Mix well and sauté until tomatoes are well cooked.
- Add the fish fillets into the pan. Coat the fish well with the masala and let it cook for about 5 minutes on each side.
- Pour the coconut milk into the pan. Let it begin to bubble before reducing the heat. Cover the pan and let it cook for about 15 minutes.
- Check the fish to ensure it is cooked. Add salt, if needed.
- Garnish with fresh coriander leaves and serve hot with rice.
