
Exotic Indian Egg Curry

Ingredients:
- 6 normal eggs
- 2 tablespoons olive oil
- 1 big, finely chopped onion
- 2 minced garlic cloves
- 1 inch minced ginger
- 2 sliced green chillies
- 2 medium-sized, finely chopped tomatoes
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 1 teaspoon garam masala
- 1 teaspoon cumin seeds
- 1 handful fresh cilantro leaves
- to taste salt
Instructions:
- Boil the eggs for 10 minutes, then cool them down under cold water and shell them.
- Heat the oil in a pan and add cumin seeds.
- Once the seeds splutter, add the finely chopped onions, minced ginger and garlic, and slit green chillies. Saute until the onions turn golden brown.
- Add the chopped tomatoes, turmeric powder, coriander powder and salt. Cook until the tomatoes are soft and mushy.
- Add the peeled and boiled eggs to the pan and sprinkle the garam masala over them. Gently mix until the eggs are well-coated with the masala.
- Garnish with fresh cilantro and serve hot with rice, naan or rotis.
