Exotic Indian Egg Curry

Ingredients:

  • 6 normal eggs
  • 2 tablespoons olive oil
  • 1 big, finely chopped onion
  • 2 minced garlic cloves
  • 1 inch minced ginger
  • 2 sliced green chillies
  • 2 medium-sized, finely chopped tomatoes
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 1 handful fresh cilantro leaves
  • to taste salt

Instructions:

  1. Boil the eggs for 10 minutes, then cool them down under cold water and shell them.
  2. Heat the oil in a pan and add cumin seeds.
  3. Once the seeds splutter, add the finely chopped onions, minced ginger and garlic, and slit green chillies. Saute until the onions turn golden brown.
  4. Add the chopped tomatoes, turmeric powder, coriander powder and salt. Cook until the tomatoes are soft and mushy.
  5. Add the peeled and boiled eggs to the pan and sprinkle the garam masala over them. Gently mix until the eggs are well-coated with the masala.
  6. Garnish with fresh cilantro and serve hot with rice, naan or rotis.
