Exotic Indian Chicken Curry

Ingredients:

  • 4 pieces chicken breasts
  • 1 large onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 2 tsp fresh ginger, grated
  • 2 large tomatoes, chopped
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 2 tsp ground coriander
  • 1 tsp red chili powder
  • 1 tsp ground cumin
  • 2 tbsp chopped fresh coriander
  • 400 ml can coconut milk
  • 2 tbsp vegetable oil
  • to taste salt
  • 2 cups cooked basmati rice

Instructions:

  1. Heat the oil in a large pan and add the onions. Cook until golden brown.
  2. Add the garlic and ginger and cook for another minute.
  3. Add the garam masala, turmeric, coriander, cumin and chili powder to the pan and stir well.
  4. Add the chicken to the pan and cook until it's sealed and has picked up some of the spices.
  5. Add the tomatoes to the pot and stir well to combine with the spices and chicken.
  6. Cook on a medium heat for about 10 minutes until the tomatoes form a sauce.
  7. Add the coconut milk to the pot and bring to a simmer.
  8. Cook for another 15 minutes until the chicken is cooked through and the flavors are well combined.
  9. Add salt to taste and garnish with the chopped fresh coriander.
  10. Serve hot with basmati rice.
