
Exotic Indian Chicken Curry

Ingredients:
- 4 pieces chicken breasts
- 1 large onion, finely chopped
- 3 cloves garlic cloves, minced
- 2 tsp fresh ginger, grated
- 2 large tomatoes, chopped
- 1 tsp garam masala
- 1 tsp ground turmeric
- 2 tsp ground coriander
- 1 tsp red chili powder
- 1 tsp ground cumin
- 2 tbsp chopped fresh coriander
- 400 ml can coconut milk
- 2 tbsp vegetable oil
- to taste salt
- 2 cups cooked basmati rice
Instructions:
- Heat the oil in a large pan and add the onions. Cook until golden brown.
- Add the garlic and ginger and cook for another minute.
- Add the garam masala, turmeric, coriander, cumin and chili powder to the pan and stir well.
- Add the chicken to the pan and cook until it's sealed and has picked up some of the spices.
- Add the tomatoes to the pot and stir well to combine with the spices and chicken.
- Cook on a medium heat for about 10 minutes until the tomatoes form a sauce.
- Add the coconut milk to the pot and bring to a simmer.
- Cook for another 15 minutes until the chicken is cooked through and the flavors are well combined.
- Add salt to taste and garnish with the chopped fresh coriander.
- Serve hot with basmati rice.
