Exotic Indian Beef Curry

Ingredients:

  • 1.5 pounds Beef stew meat
  • 1 large Onion
  • 4 cloves Garlic
  • 2 large Tomatoes
  • 1 inch Ginger
  • 2 tablespoons Curry powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Turmeric
  • 1 teaspoon Cayenne pepper
  • to taste Salt
  • to taste Black Pepper
  • 1 cup Beef stock
  • 1 cup Coconut milk
  • 2 tablespoons Oil
  • a handful Cilantro

Instructions:

  1. In a large pot, heat oil over medium heat. Once oil is hot, add the diced onion and minced garlic. Sauté until onion is translucent.
  2. Add diced tomatoes, minced ginger, curry powder, garam masala, turmeric, and cayenne pepper. Cook until tomatoes have softened.
  3. Add beef stew meat to the pot and stir to coat in the spices. Cook until beef is browned on all sides.
  4. Add beef stock and coconut milk to the pot. Turn down the heat, cover pot, and let it simmer for about 1.5 hours, or until the beef is tender.
  5. Serve the beef curry over cooked rice or with naan bread. Top with freshly chopped cilantro. Enjoy your Exotic Indian Beef Curry!
