Exotic Indian Beef Curry

Ingredients:
- 1.5 pounds Beef stew meat
- 1 large Onion
- 4 cloves Garlic
- 2 large Tomatoes
- 1 inch Ginger
- 2 tablespoons Curry powder
- 1 teaspoon Garam masala
- 1 teaspoon Turmeric
- 1 teaspoon Cayenne pepper
- to taste Salt
- to taste Black Pepper
- 1 cup Beef stock
- 1 cup Coconut milk
- 2 tablespoons Oil
- a handful Cilantro
Instructions:
- In a large pot, heat oil over medium heat. Once oil is hot, add the diced onion and minced garlic. Sauté until onion is translucent.
- Add diced tomatoes, minced ginger, curry powder, garam masala, turmeric, and cayenne pepper. Cook until tomatoes have softened.
- Add beef stew meat to the pot and stir to coat in the spices. Cook until beef is browned on all sides.
- Add beef stock and coconut milk to the pot. Turn down the heat, cover pot, and let it simmer for about 1.5 hours, or until the beef is tender.
- Serve the beef curry over cooked rice or with naan bread. Top with freshly chopped cilantro. Enjoy your Exotic Indian Beef Curry!
