Exotic Fruit Sushi

Ingredients:

  • 1 cup Sushi rice
  • 1.5 cups Water
  • 1 whole Ripe mango
  • 2 whole Kiwi
  • 1/2 whole Dragon fruit
  • 1/2 cup Raspberries
  • 4 sheets Nori sheets
  • 2 tablespoons Sushi vinegar

Instructions:

  1. Rinse the sushi rice under cold water until the water runs clear, then add to a pot with 1.5 cups of water and bring to a boil. Once boiling, cover and reduce the heat to low. Let the rice cook for 15 minutes, then remove from heat and let stand, covered, for 10 minutes.
  2. While the rice is cooking, prepare the fruit. Peel and slice the mango and kiwi into thin, long strips. Slice the dragon fruit in half lengthwise, then scoop out the flesh and slice into thin strips. Set aside the fruit.
  3. Once the rice has finished cooking, add the sushi vinegar and mix together gently, making sure all the rice is coated.
  4. On a sushi mat, lay down one sheet of nori. Wet your hands and spread a thin layer of rice on 3/4 of the nori sheet (leaving the top quarter bare). Arrange the pieces of fruit along the bottom quarter of the rice, then begin rolling the sushi using the mat, applying pressure to keep the roll tight. Repeat this process with the remaining nori sheets.
  5. Once all the sushi is rolled, carefully slice into one inch pieces using a sharp knife. Serve immediately with a side of sweet soy sauce for dipping.
