Exotic Fruit Curry

Ingredients:

  • 1 tbsp rapeseed oil
  • 1 onion, chopped
  • 2 tbsp green thai curry paste
  • 400 ml coconut milk
  • 200 g pineapple chunks
  • 1 ripe mango, peeled and sliced
  • 1 banana, sliced
  • 4 cups cooked jasmine rice
  • Fresh coriander leaves for garnishing

Instructions:

  1. 1. Heat the oil in a large frying pan, add the onion and cook for a few mins until softened.
  2. 2. Stir in the curry paste, then add the coconut milk. Bring to the boil, add the pineapple and mango, then reduce the heat to low, cover and simmer for 5 mins.
  3. 3. Stir in the sliced banana, then remove from heat.
  4. 4. Let the curry sit for a few minutes to allow the banana to soften slightly.
  5. 5.Serve with jasmine rice and garnish with fresh coriander leaves.
