
Exotic Fruit Curry

Ingredients:
- 1 tbsp rapeseed oil
- 1 onion, chopped
- 2 tbsp green thai curry paste
- 400 ml coconut milk
- 200 g pineapple chunks
- 1 ripe mango, peeled and sliced
- 1 banana, sliced
- 4 cups cooked jasmine rice
- Fresh coriander leaves for garnishing
Instructions:
- 1. Heat the oil in a large frying pan, add the onion and cook for a few mins until softened.
- 2. Stir in the curry paste, then add the coconut milk. Bring to the boil, add the pineapple and mango, then reduce the heat to low, cover and simmer for 5 mins.
- 3. Stir in the sliced banana, then remove from heat.
- 4. Let the curry sit for a few minutes to allow the banana to soften slightly.
- 5.Serve with jasmine rice and garnish with fresh coriander leaves.
