Exotic French Seafood Crepes

Ingredients:

  • 1 package crepe mix
  • 1 cup water
  • 2 cups shrimp
  • 1 cup scallops
  • 1/2 cup white wine
  • 1 stick butter
  • 1/2 cup heavy cream
  • 1 teaspoon lemon zest
  • to taste salt
  • to taste pepper

Instructions:

  1. 1. Prepare the crepes according to the package instructions and set aside.
  2. 2. In a large saucepan, melt the butter over medium heat. Add the shrimp and scallops and cook until they are fully cooked.
  3. 3. Add the white wine to the pan and allow the alcohol to cook off, about 2-3 minutes.
  4. 4. Lower the heat to medium-low and stir in the heavy cream, lemon zest, salt, and pepper.
  5. 5. Continue to cook for a few more minutes until the sauce thickens.
  6. 6. Spoon the seafood and sauce onto one side of each crepe, then fold the crepe over.
  7. 7. Serve the crepes warm, topped with a sprinkle of additional lemon zest if desired.
