
Exotic French Rice Croquettes

Ingredients:
- 2 cups Medium Grain Rice
- 4 cups Water
- 2 tablespoons Unsalted Butter
- 1 tablespoon All-Purpose Flour
- 1 cup Whole Milk
- 1/2 cup Grated Gruyère cheese
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 2 units Eggs
- 1 cup Breadcrumbs
- for frying Vegetable Oil
Instructions:
- 1. Rinse the rice until the water runs clear. Then put the rice and water in a medium-sized pot. Bring to a boil, cover with a lid, and let it simmer low until tender and water is fully absorbed, about 15-20 minutes.
- 2. In a different pot, melt the butter, add the flour, and stir continuously until a paste forms.
- 3. Gradually whisk in the milk and continue stirring until the sauce thickens.
- 4. Add the cooked rice into the sauce, followed by the grated Gruyère, salt, and pepper. Mix until all ingredients are well combined.
- 5. Let the mixture cool until it can be comfortably handled. Shape the mixture into small balls or croquette shapes.
- 6. Beat the eggs in a shallow dish. In another dish, place the breadcrumbs.
- 7. Dip each croquette into the beaten egg, and then into the breadcrumbs, making sure that they're well coated.
- 8. Heat the oil in a frying pan over medium heat. Fry the croquettes in batches, turning them frequently for even colouring, until golden brown.
- 9. Once fried, place them on paper towels to absorb any excess oil.
