Exotic French Rice Croquettes

Ingredients:

  • 2 cups Medium Grain Rice
  • 4 cups Water
  • 2 tablespoons Unsalted Butter
  • 1 tablespoon All-Purpose Flour
  • 1 cup Whole Milk
  • 1/2 cup Grated Gruyère cheese
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 units Eggs
  • 1 cup Breadcrumbs
  • for frying Vegetable Oil

Instructions:

  1. 1. Rinse the rice until the water runs clear. Then put the rice and water in a medium-sized pot. Bring to a boil, cover with a lid, and let it simmer low until tender and water is fully absorbed, about 15-20 minutes.
  2. 2. In a different pot, melt the butter, add the flour, and stir continuously until a paste forms.
  3. 3. Gradually whisk in the milk and continue stirring until the sauce thickens.
  4. 4. Add the cooked rice into the sauce, followed by the grated Gruyère, salt, and pepper. Mix until all ingredients are well combined.
  5. 5. Let the mixture cool until it can be comfortably handled. Shape the mixture into small balls or croquette shapes.
  6. 6. Beat the eggs in a shallow dish. In another dish, place the breadcrumbs.
  7. 7. Dip each croquette into the beaten egg, and then into the breadcrumbs, making sure that they're well coated.
  8. 8. Heat the oil in a frying pan over medium heat. Fry the croquettes in batches, turning them frequently for even colouring, until golden brown.
  9. 9. Once fried, place them on paper towels to absorb any excess oil.
  10. 10. Serve warm as a snack or appetizer. Enjoy these exotic French Rice Croquettes!
