Exotic French Ratatouille Pasta

Ingredients:
- 2 cups pasta
- 2 tablespoons olive oil
- 2 clove garlic cloves
- 1 onion onion
- 1 eggplant eggplant
- 2 peppers bell peppers
- 2 zucchini zucchini
- 4 tomatoes tomatoes
- a handful fresh basil leaves
- to taste grated Parmesan cheese
- to taste salt and pepper
Instructions:
- Cook the pasta according to the package instructions. Once done, drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and onion, and sauté until they're translucent.
- Add the eggplant, bell peppers, zucchini, and tomatoes to the skillet. Season with salt and pepper, and cook until the vegetables are tender.
- Chop the basil leaves and stir them into the vegetable mixture. Cook for a few more minutes to let the flavors meld together.
- Mix the cooked pasta with the vegetable mixture. Top with grated Parmesan cheese and extra basil leaves, if desired.
- Serve the pasta hot, and enjoy this exotic French Ratatouille pasta!
