Exotic French Ratatouille Pasta

Ingredients:

  • 2 cups pasta
  • 2 tablespoons olive oil
  • 2 clove garlic cloves
  • 1 onion onion
  • 1 eggplant eggplant
  • 2 peppers bell peppers
  • 2 zucchini zucchini
  • 4 tomatoes tomatoes
  • a handful fresh basil leaves
  • to taste grated Parmesan cheese
  • to taste salt and pepper

Instructions:

  1. Cook the pasta according to the package instructions. Once done, drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and onion, and sauté until they're translucent.
  3. Add the eggplant, bell peppers, zucchini, and tomatoes to the skillet. Season with salt and pepper, and cook until the vegetables are tender.
  4. Chop the basil leaves and stir them into the vegetable mixture. Cook for a few more minutes to let the flavors meld together.
  5. Mix the cooked pasta with the vegetable mixture. Top with grated Parmesan cheese and extra basil leaves, if desired.
  6. Serve the pasta hot, and enjoy this exotic French Ratatouille pasta!
