Exotic French Pork Loin with Prunes and Armagnac

Ingredients:
- 1 piece pork loin
- 15 pieces, pitted prunes
- 1 cup Armagnac
- 2 pieces, minced garlic clove
- 2 cups chicken stock
- 2 leaves bay leaves
- to taste pinches sea salt
- to taste pinches black pepper
- 2 tablespoons butter
Instructions:
- Soak prunes in Armagnac for at least an hour (preferably overnight if you have the time).
- Preheat your oven to 325 degrees F (165 degrees C).
- Salt and pepper your pork loin generously on all sides.
- In a large, ovenproof pan, melt the butter over medium-high heat. When hot, add the pork loin and brown on all sides. This should take 8-10 minutes.
- Remove the pork from the pan and add garlic, sautéing until it just begins to brown.
- Return the pork to the pan, and add the prunes (reserve the Armagnac), chicken stock, and bay leaves.
- Cover the pan, place in the oven and cook for around 2 hours, or until the internal temperature of the pork reaches 165 degrees F.
- Remove from oven and let the pork rest for a few minutes. In the meantime, strain the prunes and juice into a pot. Add the remaining Armagnac. Simmer until it reduces to a thick sauce.
- Slice the pork and serve it with a spoonful of the prune and Armagnac sauce on top. Bon Appétit!
