Exotic French Pork Loin with Prunes and Armagnac

Ingredients:

  • 1 piece pork loin
  • 15 pieces, pitted prunes
  • 1 cup Armagnac
  • 2 pieces, minced garlic clove
  • 2 cups chicken stock
  • 2 leaves bay leaves
  • to taste pinches sea salt
  • to taste pinches black pepper
  • 2 tablespoons butter

Instructions:

  1. Soak prunes in Armagnac for at least an hour (preferably overnight if you have the time).
  2. Preheat your oven to 325 degrees F (165 degrees C).
  3. Salt and pepper your pork loin generously on all sides.
  4. In a large, ovenproof pan, melt the butter over medium-high heat. When hot, add the pork loin and brown on all sides. This should take 8-10 minutes.
  5. Remove the pork from the pan and add garlic, sautéing until it just begins to brown.
  6. Return the pork to the pan, and add the prunes (reserve the Armagnac), chicken stock, and bay leaves.
  7. Cover the pan, place in the oven and cook for around 2 hours, or until the internal temperature of the pork reaches 165 degrees F.
  8. Remove from oven and let the pork rest for a few minutes. In the meantime, strain the prunes and juice into a pot. Add the remaining Armagnac. Simmer until it reduces to a thick sauce.
  9. Slice the pork and serve it with a spoonful of the prune and Armagnac sauce on top. Bon Appétit!
