Exotic French Morning Pasta

Ingredients:

  • 350 grams Spaghetti Pasta
  • 4 whole Eggs
  • 8 slices Bacon
  • 200 ml Heavy cream
  • 1 cup, shredded Gruyère cheese
  • 2 cloves Garlic
  • 1 tbsp Olive oil
  • to taste Salt and pepper
  • 1 tbsp, chopped Chives
  • 1 tsp Truffle oil

Instructions:

  1. Boil the pasta according to the packet instructions until al dente.
  2. In a frying pan, cook the bacon until crisp. Remove and chop into small pieces.
  3. In the same pan, add the olive oil and garlic, saute until fragrant.
  4. In a bowl, whisk together the eggs, cream, and shredded cheese. Season with salt and pepper.
  5. Drain the pasta, reserving a cup of the pasta water.
  6. Slowly pour the egg mixture into the pasta, stirring constantly. The heat from the pasta will cook the egg slightly and form a creamy sauce. If the sauce is too thick, add some pasta water.
  7. Stir in the chopped bacon.
  8. Serve the pasta with a drizzle of truffle oil and a sprinkle of chopped chives on top.
