
Exotic French Morning Pasta

Ingredients:
- 350 grams Spaghetti Pasta
- 4 whole Eggs
- 8 slices Bacon
- 200 ml Heavy cream
- 1 cup, shredded Gruyère cheese
- 2 cloves Garlic
- 1 tbsp Olive oil
- to taste Salt and pepper
- 1 tbsp, chopped Chives
- 1 tsp Truffle oil
Instructions:
- Boil the pasta according to the packet instructions until al dente.
- In a frying pan, cook the bacon until crisp. Remove and chop into small pieces.
- In the same pan, add the olive oil and garlic, saute until fragrant.
- In a bowl, whisk together the eggs, cream, and shredded cheese. Season with salt and pepper.
- Drain the pasta, reserving a cup of the pasta water.
- Slowly pour the egg mixture into the pasta, stirring constantly. The heat from the pasta will cook the egg slightly and form a creamy sauce. If the sauce is too thick, add some pasta water.
- Stir in the chopped bacon.
- Serve the pasta with a drizzle of truffle oil and a sprinkle of chopped chives on top.
