Exotic French Fruit Tart

Ingredients:
- 1 pack Sweet Shortcrust Pastry
- 1 cup Custard
- 2 cups Exotic Fruits (mango, passion fruit, papaya)
- 1/3 cup Sugar
- 1 teaspoon Lemon zest
- As per taste Icing sugar for dusting
Instructions:
- Preheat your oven at 180C/350F.
- Roll out the pastry and use it to line a tart tin. Chill in the fridge for 30 minutes.
- Prick the pastry base with a fork, line with baking parchment and fill with baking beans. Bake for 15 mins, then gently remove the paper and beans and cook the pastry for another 5-10 mins until biscuity.
- While the pastry is baking, prepare the custard according to the packet instructions.
- Allow the tart base to cool slightly before spooning in the custard.
- Carefully arrange your prepared exotic fruits on top of the custard.
- Sprinkle over the sugar and lemon zest, then return the tart to the oven for another 5 mins to caramelize the sugar.
- Let it cool before dusting with icing sugar and serve.
