Exotic French Fruit Tart

Ingredients:

  • 1 pack Sweet Shortcrust Pastry
  • 1 cup Custard
  • 2 cups Exotic Fruits (mango, passion fruit, papaya)
  • 1/3 cup Sugar
  • 1 teaspoon Lemon zest
  • As per taste Icing sugar for dusting

Instructions:

  1. Preheat your oven at 180C/350F.
  2. Roll out the pastry and use it to line a tart tin. Chill in the fridge for 30 minutes.
  3. Prick the pastry base with a fork, line with baking parchment and fill with baking beans. Bake for 15 mins, then gently remove the paper and beans and cook the pastry for another 5-10 mins until biscuity.
  4. While the pastry is baking, prepare the custard according to the packet instructions.
  5. Allow the tart base to cool slightly before spooning in the custard.
  6. Carefully arrange your prepared exotic fruits on top of the custard.
  7. Sprinkle over the sugar and lemon zest, then return the tart to the oven for another 5 mins to caramelize the sugar.
  8. Let it cool before dusting with icing sugar and serve.
