Exotic French Fish Stew

Ingredients:

  • 2 lbs White Fish fillets
  • 2 tbsp Olive Oil
  • 3 cloves Garlic
  • 1 cup White Wine
  • 1 pinch Saffron Threads
  • 4 cups Chicken Broth
  • 2 sprigs Fresh Thyme
  • 2 Tomatoes
  • 1 Fennel Bulb
  • to taste Salt and Pepper

Instructions:

  1. Heat the olive oil in a large pan over medium heat. Add the finely sliced fennel bulb and chopped garlic, fry until golden and fragrant.
  2. Deglaze the pan with white wine and reduce by half. After that, add the saffron threads and chicken broth, bringing the mixture to a simmer.
  3. Add the fresh thyme, fish fillets and chopped tomatoes. Season with salt and pepper.
  4. Cover the pan and let the stew simmer gently for about 15 minutes, or until the fish is cooked through.
  5. Serve the stew hot with a French baguette on the side for dipping.
