
Exotic French Fish Stew

Ingredients:
- 2 lbs White Fish fillets
- 2 tbsp Olive Oil
- 3 cloves Garlic
- 1 cup White Wine
- 1 pinch Saffron Threads
- 4 cups Chicken Broth
- 2 sprigs Fresh Thyme
- 2 Tomatoes
- 1 Fennel Bulb
- to taste Salt and Pepper
Instructions:
- Heat the olive oil in a large pan over medium heat. Add the finely sliced fennel bulb and chopped garlic, fry until golden and fragrant.
- Deglaze the pan with white wine and reduce by half. After that, add the saffron threads and chicken broth, bringing the mixture to a simmer.
- Add the fresh thyme, fish fillets and chopped tomatoes. Season with salt and pepper.
- Cover the pan and let the stew simmer gently for about 15 minutes, or until the fish is cooked through.
- Serve the stew hot with a French baguette on the side for dipping.
