Exotic French Dinner: Provençal Baked Omelette

Ingredients:

  • 8 whole Eggs
  • to taste Salt
  • to taste Ground black pepper
  • 3 tbsp Olive Oil
  • 2 whole Shallots
  • 2 whole Garlic cloves
  • 3 cups Assorted wild mushrooms
  • 1 tbsp Fresh thyme leaves
  • 1.5 cups Gruyère cheese
  • as needed Fresh parsley for garnishing

Instructions:

  1. Preheat an oven to 375°F (190°C).
  2. In a bowl, whisk the eggs. Season with salt and pepper and set aside.
  3. In a large oven-safe skillet, heat the olive oil over medium heat. Add the shallots, garlic, and thyme. Sauté until the shallots are soft and transparent.
  4. Add the wild mushrooms to the skillet and cook until they are soft and cooked through. Season with additional salt and pepper if required.
  5. Pour the whisked eggs into the skillet, stirring slightly to distribute the ingredients evenly. Allow the mixture to cook undisturbed for about 2-3 minutes until the edges start to set.
  6. Sprinkle the Gruyère cheese evenly over the egg and mushroom mixture.
  7. Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the omelette is set and golden.
  8. Remove from the oven and let it cool for a few minutes before cutting into wedges.
  9. Garnish with fresh parsley. Serve warm.
