
Exotic French Dinner: Provençal Baked Omelette

Ingredients:
- 8 whole Eggs
- to taste Salt
- to taste Ground black pepper
- 3 tbsp Olive Oil
- 2 whole Shallots
- 2 whole Garlic cloves
- 3 cups Assorted wild mushrooms
- 1 tbsp Fresh thyme leaves
- 1.5 cups Gruyère cheese
- as needed Fresh parsley for garnishing
Instructions:
- Preheat an oven to 375°F (190°C).
- In a bowl, whisk the eggs. Season with salt and pepper and set aside.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the shallots, garlic, and thyme. Sauté until the shallots are soft and transparent.
- Add the wild mushrooms to the skillet and cook until they are soft and cooked through. Season with additional salt and pepper if required.
- Pour the whisked eggs into the skillet, stirring slightly to distribute the ingredients evenly. Allow the mixture to cook undisturbed for about 2-3 minutes until the edges start to set.
- Sprinkle the Gruyère cheese evenly over the egg and mushroom mixture.
- Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the omelette is set and golden.
- Remove from the oven and let it cool for a few minutes before cutting into wedges.
- Garnish with fresh parsley. Serve warm.
