Exotic French Chicken Confit Snack

Ingredients:
- 2 units Chicken legs
- enough to cover Duck fat
- 2 tsp Salt
- 1 tsp Black peppercorns
- 2 units Garlic cloves
- 2 units Bay leaves
- 1 tsp Thyme
- 1 unit Baguette
- to taste Dijon Mustard
Instructions:
- Salt the chicken legs evenly and refrigerate for at least 2 hours, or preferably overnight.
- When ready to cook, preheat your oven to 200°F (93°C).
- Heat the duck fat in a pot over medium heat and add the chicken legs. The legs should be fully covered in fat.
- Add the garlic, bay leaves, peppercorns, and thyme to the pot.
- Once the fat has melted and the pot is heated, move it to the oven and cook for 2 hours.
- After it's cooked, let the chicken cool in the fat until it's at room temperature. Then refrigerate it for about 2 hours, or until the fat hardens.
- To serve, spread Dijon mustard on sliced baguette, then place the confit chicken leg on top.
