Exotic French Chicken Cassoulet

Ingredients:

  • 4 slices Bacon
  • 8 Boneless chicken thighs
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 Onion
  • 2 Carrots
  • 4 Garlic cloves
  • 2 cans Cannellini beans
  • 2 cups Chicken Broth
  • 1 cup White wine
  • 2 Bay leaves
  • 1 teaspoon Thyme

Instructions:

  1. In a large Dutch oven, cook bacon over medium heat until crispy. Remove to paper towels with a slotted spoon; drain, reserving drippings.
  2. Season the chicken with salt and pepper, then brown in drippings on all sides. Remove and set aside.
  3. In the same pan, sauté onion and carrots until tender. Add garlic, cook 1 minute longer.
  4. Stir in beans, broth, wine, bay leaves, thyme, and the cooked bacon and chicken.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 2 hours, until the chicken is very tender.
  6. Discard bay leaves and serve with crusty French bread.
