Exotic French Chicken Cassoulet

Ingredients:
- 4 slices Bacon
- 8 Boneless chicken thighs
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 Onion
- 2 Carrots
- 4 Garlic cloves
- 2 cans Cannellini beans
- 2 cups Chicken Broth
- 1 cup White wine
- 2 Bay leaves
- 1 teaspoon Thyme
Instructions:
- In a large Dutch oven, cook bacon over medium heat until crispy. Remove to paper towels with a slotted spoon; drain, reserving drippings.
- Season the chicken with salt and pepper, then brown in drippings on all sides. Remove and set aside.
- In the same pan, sauté onion and carrots until tender. Add garlic, cook 1 minute longer.
- Stir in beans, broth, wine, bay leaves, thyme, and the cooked bacon and chicken.
- Bring to a boil, then reduce heat, cover, and simmer for about 2 hours, until the chicken is very tender.
- Discard bay leaves and serve with crusty French bread.
