
Exotic French Breakfast Fruit Crepes

Ingredients:
- 1 cup Milk
- 0.5 cup Water
- 2 large Eggs
- 1 cup Flour
- 1 tablespoon Sugar
- 0.25 teaspoon Salt
- 2 tablespoon Butter
- 2 cups Assorted tropical fruits (e.g. mango, kiwi, pineapple)
- 1 cup Heavy cream
- 1 tablespoon Powdered Sugar
Instructions:
- In a blender, combine the milk, water, eggs, flour, sugar, and salt. Blend until smooth. Let the batter rest for about 10 minutes.
- Meanwhile, peel and cut the fruits into thin slices.
- In a nonstick skillet, melt 1 tablespoon of the butter over medium heat. Pour 1/4 of the batter into the skillet and swirl to completely cover the bottom of the skillet. Cook until the bottom of the crepe is golden brown, about 2 minutes. Flip and cook the other side until golden.
- Repeat with the remaining batter, adding more butter as needed.
- Whip the heavy cream, fold in the powdered sugar, and chill until needed.
- To serve, fill each crepe with a portion of the fresh fruit, top with a dollop of the whipped cream, fold, and sprinkle with extra sugar if desired.
