Exotic French Breakfast Fruit Crepes

Ingredients:

  • 1 cup Milk
  • 0.5 cup Water
  • 2 large Eggs
  • 1 cup Flour
  • 1 tablespoon Sugar
  • 0.25 teaspoon Salt
  • 2 tablespoon Butter
  • 2 cups Assorted tropical fruits (e.g. mango, kiwi, pineapple)
  • 1 cup Heavy cream
  • 1 tablespoon Powdered Sugar

Instructions:

  1. In a blender, combine the milk, water, eggs, flour, sugar, and salt. Blend until smooth. Let the batter rest for about 10 minutes.
  2. Meanwhile, peel and cut the fruits into thin slices.
  3. In a nonstick skillet, melt 1 tablespoon of the butter over medium heat. Pour 1/4 of the batter into the skillet and swirl to completely cover the bottom of the skillet. Cook until the bottom of the crepe is golden brown, about 2 minutes. Flip and cook the other side until golden.
  4. Repeat with the remaining batter, adding more butter as needed.
  5. Whip the heavy cream, fold in the powdered sugar, and chill until needed.
  6. To serve, fill each crepe with a portion of the fresh fruit, top with a dollop of the whipped cream, fold, and sprinkle with extra sugar if desired.
