Exotic Citrus Paella

Ingredients:

  • 3 tablespoons extra virgin olive oil
  • 2 pieces garlic cloves
  • 1 piece small red onion
  • 2 pieces bell peppers
  • 1/2 cup calamari rings
  • 1 cup short-grain rice
  • 12 pieces shrimp
  • 2 1/2 cups chicken broth
  • 1/2 teaspoon saffron threads
  • 1 piece lemon
  • 1 piece orange
  • 1 piece grapefruit
  • 1/2 bunch parsley
  • to taste salt and pepper

Instructions:

  1. Heat the olive oil in a large pan over medium heat. Add the garlic and onion, cooking until softened.
  2. Add the bell peppers and calamari rings, cooking until the calamari is opaque.
  3. Stir in the rice, making sure it's fully coated in the oil and begins to toast lightly.
  4. Add the shrimp, chicken broth, saffron threads, and the juice from the lemon, orange, and grapefruit. Stir everything together, then cover and allow to simmer for 25-30 minutes, until the rice is cooked.
  5. Finish by seasoning with salt, black pepper, and garnishing with parsley. Serve the paella straight from the pan, and enjoy your midnight craving in style.
