
Exotic Citrus Paella

Ingredients:
- 3 tablespoons extra virgin olive oil
- 2 pieces garlic cloves
- 1 piece small red onion
- 2 pieces bell peppers
- 1/2 cup calamari rings
- 1 cup short-grain rice
- 12 pieces shrimp
- 2 1/2 cups chicken broth
- 1/2 teaspoon saffron threads
- 1 piece lemon
- 1 piece orange
- 1 piece grapefruit
- 1/2 bunch parsley
- to taste salt and pepper
Instructions:
- Heat the olive oil in a large pan over medium heat. Add the garlic and onion, cooking until softened.
- Add the bell peppers and calamari rings, cooking until the calamari is opaque.
- Stir in the rice, making sure it's fully coated in the oil and begins to toast lightly.
- Add the shrimp, chicken broth, saffron threads, and the juice from the lemon, orange, and grapefruit. Stir everything together, then cover and allow to simmer for 25-30 minutes, until the rice is cooked.
- Finish by seasoning with salt, black pepper, and garnishing with parsley. Serve the paella straight from the pan, and enjoy your midnight craving in style.
