
Exotic Chinese Vegetable Stir-Fry Rice

Ingredients:
- 1 cup Jasmine Rice
- 1 cup Broccoli
- 1/2 cup Carrots
- 1/2 cup Bell Peppers
- 1/2 cup Snow Peas
- 1/2 cup Bok Choy
- 1/4 cup Bean Sprouts
- 2 Tbsps Vegetable Oil
- 1 Tbsp Soy Sauce
- 1 Tbsp Hoisin Sauce
- 1 tsp Sesame Oil
- 2 cloves Garlic
- 1 inch Ginger
- 2 stalks Scallions
- 1 piece Red Chili
- 1 piece Star Anise
- 1/2 tsp Szechuan Peppercorns
Instructions:
- Cook rice according to package instructions and set aside.
- Heat vegetable oil in a large wok or frying pan over medium-high heat.
- Add garlic, ginger, scallions, red chili, star anise, and Szechuan peppercorns to the pan and stir-fry for about 2 minutes until fragrant.
- Add broccoli, carrots, bell peppers, snow peas, and bok choy to the pan. Stir-fry for about 3-5 minutes until the vegetables are tender.
- Add the rice to the pan and stir well to mix with the vegetables.
- Add soy sauce, hoisin sauce, and sesame oil to the pan and stir well to combine. Continue to stir-fry for another 2 minutes.
- Turn off the heat and mix in the bean sprouts.
- Serve the stir-fry rice hot, garnished with additional sliced scallions.
