Exotic Chinese Vegetable Stir-Fry Rice

Ingredients:

  • 1 cup Jasmine Rice
  • 1 cup Broccoli
  • 1/2 cup Carrots
  • 1/2 cup Bell Peppers
  • 1/2 cup Snow Peas
  • 1/2 cup Bok Choy
  • 1/4 cup Bean Sprouts
  • 2 Tbsps Vegetable Oil
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Hoisin Sauce
  • 1 tsp Sesame Oil
  • 2 cloves Garlic
  • 1 inch Ginger
  • 2 stalks Scallions
  • 1 piece Red Chili
  • 1 piece Star Anise
  • 1/2 tsp Szechuan Peppercorns

Instructions:

  1. Cook rice according to package instructions and set aside.
  2. Heat vegetable oil in a large wok or frying pan over medium-high heat.
  3. Add garlic, ginger, scallions, red chili, star anise, and Szechuan peppercorns to the pan and stir-fry for about 2 minutes until fragrant.
  4. Add broccoli, carrots, bell peppers, snow peas, and bok choy to the pan. Stir-fry for about 3-5 minutes until the vegetables are tender.
  5. Add the rice to the pan and stir well to mix with the vegetables.
  6. Add soy sauce, hoisin sauce, and sesame oil to the pan and stir well to combine. Continue to stir-fry for another 2 minutes.
  7. Turn off the heat and mix in the bean sprouts.
  8. Serve the stir-fry rice hot, garnished with additional sliced scallions.
