Exotic Chinese Tea Eggs

Ingredients:

  • 6 units Eggs
  • 2 tbsp Black Tea Leaves
  • 0.5 cup Soy Sauce
  • 4 pieces Star Anise
  • 1 stick Cinnamon Stick
  • 2 tsp Peppercorns
  • 2 tsp Sugar

Instructions:

  1. Carefully place the eggs in a medium pot and fill it with enough water to cover the eggs.
  2. Turn the heat to high and bring the water to a boil. Once the water comes to a boil, turn off the heat and leave the eggs in the hot water for about 10 minutes.
  3. Remove the eggs and cool them under running water. Once the eggs are cool to touch, lightly crack the shells using the back of a spoon. This will give the eggs a beautiful marbled effect once they've been steeped in tea.
  4. In the same pot, add the tea leaves, soy sauce, star anise, cinnamon stick, peppercorns, and sugar. Add the cracked eggs along with enough water to cover everything.
  5. Bring the pot to a low simmer and let it cook for about 1 hour.
  6. After an hour, turn off the heat and leave the eggs in the tea mixture to continue steeping. For a more intense flavor and color, leave them overnight.
  7. Before serving, peel the eggs and display the beautiful marbled patterns. These can be served cold or heated up, and make a perfect snack or part of a meal.
