
Exotic Chinese Style Fried Rice

Ingredients:
- 3 cups Jasmine Rice, Cooked
- 2 tablespoons Sesame oil
- 3 tablespoons Soy Sauce
- 1 cup Green peas, fresh or frozen
- 2 Eggs
- Handful Green onions, chopped
- 100 grams Prawns, shelled and deveined
- 200 grams Exotic mushrooms (like Shiitake or Oyster)
- 3 Garlic cloves, minced
- 1 Red chili, chopped
Instructions:
- Heat up a wok (or large frying pan) over high heat. Add 1 tablespoon of sesame oil.
- Add the prawns and mushrooms and cook for about 5 minutes, or until the prawns turn pink and are cooked through. Remove them from the wok and set aside.
- Reduce the heat to medium and add the remaining sesame oil to the wok. Add the chopped green onions, minced garlic, and chili, cook for 1-2 minutes or until aromatic.
- Push everything to one side of the wok. On the empty side, crack the eggs and scramble them. Once cooked, mix them with the rest of the items in the wok.
- Add the cooked jasmine rice, peas, soy sauce to the wok. Stir everything together and let it cook for about 5 minutes, or until the rice is hot and everything is well mixed.
- Return the prawns and mushrooms to the wok, toss everything together, and let it cook for a few more minutes.
- Serve your exotic Chinese style fried rice hot, garnished with a few more chopped green onions if desired.
