
Exotic Chinese Stir-Fried Egg Nests

Ingredients:
- 8 whole Eggs
- 1 whole Green Bell Pepper
- 1 whole Red Bell Pepper
- 2 tablespoons Cooking Oil
- 2 tablespoons Soy Sauce
- 2 cloves Garlic
- 1 inch Fresh ginger
- 3 stalks Scallions
- 1 tablespoon Hoisin Sauce
Instructions:
- Prepare the vegetables by slicing the bell peppers and scallions, and mincing the garlic and ginger.
- Whisk the eggs in a large bowl.
- Heat the oil in a large non-stick frying pan over medium-high heat.
- Pour the eggs into the pan and let them spread out like a pancake. Cook until the underside is golden brown and the top is set, about 3-4 minutes.
- Flip the egg pancake and cook the other side until golden brown, about 2 minutes. Remove from the heat and cut into pieces.
- Return the pan to the heat and add the vegetables, garlic and ginger. Stir fry until the vegetables are tender, about 5 minutes.
- Add the soy sauce and hoisin sauce to the pan and stir to combine.
- Add the fried egg pieces to the pan and toss to combine with the sauce and vegetables. Cook for another 2-3 minutes to heat through.
- Serve the stir-fried egg nests hot, garnished with the sliced scallions.
