Exotic Chinese Stir-Fried Egg Nests

Ingredients:

  • 8 whole Eggs
  • 1 whole Green Bell Pepper
  • 1 whole Red Bell Pepper
  • 2 tablespoons Cooking Oil
  • 2 tablespoons Soy Sauce
  • 2 cloves Garlic
  • 1 inch Fresh ginger
  • 3 stalks Scallions
  • 1 tablespoon Hoisin Sauce

Instructions:

  1. Prepare the vegetables by slicing the bell peppers and scallions, and mincing the garlic and ginger.
  2. Whisk the eggs in a large bowl.
  3. Heat the oil in a large non-stick frying pan over medium-high heat.
  4. Pour the eggs into the pan and let them spread out like a pancake. Cook until the underside is golden brown and the top is set, about 3-4 minutes.
  5. Flip the egg pancake and cook the other side until golden brown, about 2 minutes. Remove from the heat and cut into pieces.
  6. Return the pan to the heat and add the vegetables, garlic and ginger. Stir fry until the vegetables are tender, about 5 minutes.
  7. Add the soy sauce and hoisin sauce to the pan and stir to combine.
  8. Add the fried egg pieces to the pan and toss to combine with the sauce and vegetables. Cook for another 2-3 minutes to heat through.
  9. Serve the stir-fried egg nests hot, garnished with the sliced scallions.
