Exotic Chinese Steamed Fish

Ingredients:

  • 1 piece Whole white fish (such as snapper or bass)
  • 2 inch piece Fresh ginger
  • 2 stalks Spring onions
  • 2 pieces Red chillies
  • 1/4 cup Chinese cooking wine
  • 1/4 cup Soy sauce
  • 1 teaspoon Sugar
  • 2 tablespoons Sesame oil
  • 1/2 bunch Cilantro

Instructions:

  1. Clean the fish and pat dry. Make diagonal cuts across the body of the fish on both sides.
  2. Peel the ginger and cut into thin slices. Cut the spring onions and chillies into 2 inch pieces.
  3. Combine the cooking wine, soy sauce, sugar and half of the sesame oil in a bowl.
  4. Place the fish in a heatproof dish and pour the soy sauce mixture over it. Top with half of the ginger slices, spring onions and chillies.
  5. Set up a steamer or place a rack in a wok or deep pan and fill with 2 inches of water. Bring to a boil over high heat.
  6. Place the dish with the fish in the steamer or on the rack. Cover tightly and steam over high heat for about 20 minutes or until the fish flakes easily with a fork.
  7. In a small pan, heat the remaining sesame oil until hot. Pour over the cooked fish. Garnish with remaining ginger, spring onions, chillies and cilantro.
  8. Serve the fish hot with rice or steamed bok choy. Enjoy your exotic Chinese steamed fish!
