Exotic Chinese Seafood Stir-fry

Ingredients:

  • 1 pound shrimp
  • 1 pound scallops
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 cloves garlic
  • 1 tablespoon fresh ginger
  • 0.5 teaspoon chili flakes
  • 3 cups assorted vegetables (bell peppers, snap peas, carrots)
  • 1 bunch spring onions

Instructions:

  1. Clean and de-vein the shrimp and clean the scallops.
  2. Heat sesame oil in a wok or large pan over medium-high heat.
  3. Add the garlic, ginger, and chili flakes, stirring until fragrant.
  4. Add the shrimp and scallops, cooking until they are halfway done.
  5. Add the assorted vegetables and stir-fry for about 3 minutes.
  6. Pour in the oyster sauce and soy sauce, stir well to coat the seafood and vegetables.
  7. Slice the spring onions diagonally and sprinkle them on top.
  8. Serve hot with steamed jasmine rice.
