
Exotic Chinese Seafood Spring Rolls

Ingredients:
- 8 pieces Spring roll wrappers
- 1/2 cup Shrimp
- 1/2 cup Scallops
- 2 tablespoons Soy sauce
- 1/2 cup Chopped green onions
- 1/2 cup Chopped cabbage
- 1 teaspoon Grated ginger
- 1 teaspoon Minced garlic
- For frying Vegetable oil
Instructions:
- Clean and devein the shrimp, chop into small pieces along with the scallops
- Heat a pan and add a tablespoon of oil, toss in the green onions, ginger, and garlic. Saute until fragrant
- Add the chopped shrimp and scallops to the pan and cook for a few minutes until they change color
- Add the cabbage and soy sauce, stir well to combine. Set aside to cool
- Once the filling is cool, lay out the spring roll wrappers. Place about 2 tablespoons of the filling onto each wrapper, and roll tightly sealing the edges with a bit of water
- Heat oil in a deep fryer or pan. Once hot, gently drop in the spring rolls and fry until golden brown
- Transfer onto a plate lined with paper towels to drain excess oil
- Serve warm with a side of soy sauce or sweet chili sauce for dipping
