Exotic Chinese Seafood Spring Rolls

Ingredients:

  • 8 pieces Spring roll wrappers
  • 1/2 cup Shrimp
  • 1/2 cup Scallops
  • 2 tablespoons Soy sauce
  • 1/2 cup Chopped green onions
  • 1/2 cup Chopped cabbage
  • 1 teaspoon Grated ginger
  • 1 teaspoon Minced garlic
  • For frying Vegetable oil

Instructions:

  1. Clean and devein the shrimp, chop into small pieces along with the scallops
  2. Heat a pan and add a tablespoon of oil, toss in the green onions, ginger, and garlic. Saute until fragrant
  3. Add the chopped shrimp and scallops to the pan and cook for a few minutes until they change color
  4. Add the cabbage and soy sauce, stir well to combine. Set aside to cool
  5. Once the filling is cool, lay out the spring roll wrappers. Place about 2 tablespoons of the filling onto each wrapper, and roll tightly sealing the edges with a bit of water
  6. Heat oil in a deep fryer or pan. Once hot, gently drop in the spring rolls and fry until golden brown
  7. Transfer onto a plate lined with paper towels to drain excess oil
  8. Serve warm with a side of soy sauce or sweet chili sauce for dipping
