Exotic Chinese Pineapple Fried Rice

Ingredients:

  • 2 cups Cooked Jasmine Rice
  • 1.5 cups Pineapple chunks
  • 0.5 lb Chicken Tenders
  • 2 tbsp Soy Sauce
  • 1 tbsp Sesame Oil
  • 1 pc White Onion
  • 0.5 pcs each Green & Red Bell Peppers
  • 2 cloves Garlic
  • 2 stalks Green onions
  • 2 pcs Eggs
  • 0.5 cup Peas
  • 0.5 cup Carrots
  • 0.5 cup Cashews

Instructions:

  1. 1. Cut the chicken tenders into small pieces. Chop the onion, bell peppers, garlic, and green onions. Beat the eggs in a small bowl.
  2. 2. Heat sesame oil in a wok or large pan over medium-high heat.
  3. 3. Add the chicken to the pan and stir-fry until cooked. Remove the chicken from the pan and set aside.
  4. 4. In the same pan, add the onions, pepper, garlic, and carrots. Stir-fry until they're slightly soft.
  5. 5. Push the vegetables to one side of the pan and pour the beaten eggs on the other side. Stir to scramble the eggs. Once the eggs are cooked, mix them with the vegetables.
  6. 6. Add the rice, peas, and pineapple to the pan. Stir well to combine all the ingredients.
  7. 7. Stir in the soy sauce and chicken. Cook for a few minutes to heat through.
  8. 8. Top with cashews and green onions. Serve hot.
