Exotic Chinese Peking Duck

Ingredients:

  • 1 whole Young Duck
  • 1 cup Honey
  • 1 cup Soy Sauce
  • 1 tablespoon Chinese Five Spice Powder
  • 1 bunch Scallions
  • 2 whole Cucumbers
  • 1 package Peking Duck Pancakes
  • 4 tablespoons Hoisin Sauce

Instructions:

  1. Clean the duck and dry thoroughly. Tie the duck's neck tightly with string leaving enough length to hang the duck.
  2. Brush the duck with a mixture of honey, soy sauce, and a pinch of the Chinese five spice powder. Hang the duck in a cool, dry place for 24 hours.
  3. Preheat a roasting pan in an oven at 350°F (175°C). Once heated, place in the duck, breast side down and roast for 30 minutes.
  4. Turn the duck over and continue to roast for an additional hour or until the skin is crispy and the duck is cooked thoroughly.
  5. While the duck is resting, cut the scallions and cucumbers into matchstick lengths. Warm the Peking duck pancakes according to package instructions.
  6. Once the duck has rested, carve the skin and meat from the duck and serve with the pancakes, scallions, cucumbers, and hoisin sauce, allowing guests to make their own rolls.
