Exotic Chinese Peking Duck

Ingredients:
- 1 whole Young Duck
- 1 cup Honey
- 1 cup Soy Sauce
- 1 tablespoon Chinese Five Spice Powder
- 1 bunch Scallions
- 2 whole Cucumbers
- 1 package Peking Duck Pancakes
- 4 tablespoons Hoisin Sauce
Instructions:
- Clean the duck and dry thoroughly. Tie the duck's neck tightly with string leaving enough length to hang the duck.
- Brush the duck with a mixture of honey, soy sauce, and a pinch of the Chinese five spice powder. Hang the duck in a cool, dry place for 24 hours.
- Preheat a roasting pan in an oven at 350°F (175°C). Once heated, place in the duck, breast side down and roast for 30 minutes.
- Turn the duck over and continue to roast for an additional hour or until the skin is crispy and the duck is cooked thoroughly.
- While the duck is resting, cut the scallions and cucumbers into matchstick lengths. Warm the Peking duck pancakes according to package instructions.
- Once the duck has rested, carve the skin and meat from the duck and serve with the pancakes, scallions, cucumbers, and hoisin sauce, allowing guests to make their own rolls.
