Exotic Chinese Mooncake with Egg

Ingredients:
- 4 unit Salted Duck Eggs
- 500 grams Lotus Paste
- 300 grams Cake Flour
- 180 grams Golden Syrup
- 75 ml Vegetable Oil
- 1 tsp Lye Water
- 80 grams Watermelon Seeds
- 300 grams Red Bean Paste
- 40 grams Melon Seeds
Instructions:
- Start the preparation by making the dough. Mix the cake flour, golden syrup, vegetable oil, and lye water together. Knead to a dough and rest for 2 hours.
- While the dough is resting, prepare the mooncake filling. Mix the lotus paste, watermelon seeds, and red bean paste together.
- Remove the yolks from the salted duck eggs, and clean with wine. Dissolve the maltose in a small amount of hot water and coat the yolks in the solution for a glossy finish.
- Divide the dough into smaller portions and roll to a thin sheet. Wrap each yolk with a portion of filling and then a layer of dough. Shape it like a mooncake using a cake mould.
- Preheat the oven to 180 degrees Celsius. Place the mooncakes on a baking tray lined with baking paper.
- Bake for 10 mins, then remove from oven. Apply an egg wash then return to the oven for another 10-20 mins or until golden brown.
