Exotic Chinese Mooncake with Egg

Ingredients:

  • 4 unit Salted Duck Eggs
  • 500 grams Lotus Paste
  • 300 grams Cake Flour
  • 180 grams Golden Syrup
  • 75 ml Vegetable Oil
  • 1 tsp Lye Water
  • 80 grams Watermelon Seeds
  • 300 grams Red Bean Paste
  • 40 grams Melon Seeds

Instructions:

  1. Start the preparation by making the dough. Mix the cake flour, golden syrup, vegetable oil, and lye water together. Knead to a dough and rest for 2 hours.
  2. While the dough is resting, prepare the mooncake filling. Mix the lotus paste, watermelon seeds, and red bean paste together.
  3. Remove the yolks from the salted duck eggs, and clean with wine. Dissolve the maltose in a small amount of hot water and coat the yolks in the solution for a glossy finish.
  4. Divide the dough into smaller portions and roll to a thin sheet. Wrap each yolk with a portion of filling and then a layer of dough. Shape it like a mooncake using a cake mould.
  5. Preheat the oven to 180 degrees Celsius. Place the mooncakes on a baking tray lined with baking paper.
  6. Bake for 10 mins, then remove from oven. Apply an egg wash then return to the oven for another 10-20 mins or until golden brown.
